What is already live

The cup has four lines: bean, milk, cup, minute. Milk prices sit live on milk.koveh.com — AMA farm milk, Oatly from the shelf, no made-up horeca numbers. Board has the day close: cash, card, tip. The house behind that is still missing. Fridge, music tax, terrace, breakage — we are building that now. No fake IoT numbers until a meter is actually there.

Why the rest eats the profit

A cappuccino sheet lies if the fridge runs all day and the terrace still pays rent in November. In Vienna the floor comes twice: the room and the Schanigarten, often extra with the city. Power is not one number. It is machine, grinder, cold room, light, dishwasher. Water is the sink and the steam. Chemicals are not a supermarket bottle — they are what you actually wash and descale with. Breakage is the cup that hits the floor, and the glass nobody writes down. Machine service is a contract, not a surprise shop. Music is AKM. Screens and radios can trigger the ORF fee. Payroll tax sits on wages. The chamber wants its share. Inspections come: hygiene, fire, whatever the office sends. Each line is small. Together they are the month.

You can type syrup into a line. Better is to see the real move. In the EU that is Open Banking: you let us read transactions — not pay. Or you drop a CAMT or CSV from George, Raiffeisen, Revolut into a folder. Or someone throws PDF and photo receipts into a folder, Telegram, Drop. We sort: milk is not AKM, the power bill is not the tax advisor. Then unit economics stops being a guess. The cup knows its four lines. The month knows the rest.

Later, when the money is clear: how the shift moves. Not «who is lazy». We call that Blue Ring. We look at time and paths. Wi-Fi can count how many devices are in the room — not whose phone. That already exists as anonymous presence. A camera only if the shop asks and the law carries it: heatmap, no faces, no film of the person. Works council and a written deal, or not at all. The line outside: we look at how the shift moves. Not: we watch your workers. First a shop that has already been open a few months. Otherwise the scene is too thin.

Who it is for
